Recipe
Cook one 15 oz. can of chickpeas (drained and washed), in an ovenproof skillet with 2 tablespoons olive oil and 1 teaspoon each of cumin and smoked paprika, 2 minutes. Season with salt, then bake 20 minutes at 425 degrees.
This snack is simple, healthy, and delicious!
ooO! these look yummy :) i don't like chickpeas raw (except in hummus), but baked sounds intereseting... they kinda remind me of cornnuts.
ReplyDeleteyummmm i'm definitely going to try this. I just bought 2 cans of chickpeas this weekend because they were on sale at Sprouts. I've been loving the Lemony Chickpea Stir Fry (http://www.101cookbooks.com/archives/lemony-chickpea-stirfry-recipe.html) you told me about, S! I already made it 3 times, and I seriously crave it all the time. I just had it yesterday for lunch!

mmm those look good. i recently tried roasted ginko nuts. it sorta reminds me of that. will try the new chickpea recipes you guys posted. i've been in the cooking mood =)
